This cold soba noodle recipe couldn’t be easier! Cold soba noodles are one of my favorite side dishes. There is so much to love about soba! They have twice the protein as normal noodles, way more fiber, and are amazing cold. Best of all, so easy to make. I feel like every sentence of this post may have an exclamation point, because I just love soba noodles so much! Make them on Sunday night, put in a zip top bag, and you have a side dish every day of the week. How easy is that?
Ingredients
- 1/2 lb Soba Noodles
- 2 Tablespoons Hoison Sauce
- 1 Tablespoon Low Sodium Soy Sauce
- 1 Tablespoon Siracha Sauce or Gochuchung Adjust For Your Level of Heat
- 1 1/2 Teaspoons Rice Vinegar
- 1 Teaspoon Sesame Oil
- 1/2 Teaspoon of Honey
- 2 Scallions Chopped
- 1 Tablespoon Sesame Seeds
Instructions
- Cook soba according to box
- Drain well, run under cold water until the noodles are cold
- Combine all ingredients to make sauce and mix into noodles
- Garnish with extra sesame seeds
- Keeps well in a zip top bag for up to a week in the fridge
