Sometimes after work I’m in a rush and need to cook dinner in ten or fifteen minutes. It’s hard to squeeze in walking the dog, going to the gym, stretching, taking a shower AND cooking a decent healthy dinner. I could only imagine how much more difficult it would be to add a family into that mix. I empathize for the families out there. Trying to get all that done in just a couple hours can feel super overwhelming, but it doesn’t have to!
Fish is a great protein, it can get marinated really quickly, cook really quickly and healthify (not sure if that’s a word but it is now) your body really quickly. It can get marinated well in just 10-60 minutes. Before I went to the gym I tossed the fish in a zip top bag and marinated it. When I got done an hour later it was ready to grill, and took on all the wonderful flavors from the marinade.

I absolutely ADORE swordfish, it’s rich and meaty flavor… Oh yes yes! However, when I do indulge, I typically feel a TINY BIT guilty because… Well… The mercury 🙁 But I have read that the selenium in swordfish cancels out the negative affects of mercury… REJOICE! LOL!

I don’t believe the mercury hype. I eat about a billion times more than the recommended amount by the FDA, what a joke. Eat that swordfish, it’s awesome! Hope you try the recipe, if you do let me know how it goes.
