I have shared this in the past – but I will reiterate – I love, love, love soba noodles. This recipe literally takes 5 minutes to make (not including time to boil water) and presto a side dish is born. There is an uber sesame flavor permeating this dish ten fold. Three sesame ingredients makes this the most sesame-ey recipe on the planet; sesame seeds, sesame oil and the secret ingredient sesame paste, otherwise known as tahini. Usually we think of tahini in Mid East or Mediterranean cuisine but there is an Asian form which is used in different Asian gastronomy. Though it comes in a different container and is probably made differently. I used tahini in this Sesame Soba Noodle recipe but if you’re determined to make it super authentic, feel free to hunt down the real stuff. Me, I don’t care that much and the recipe will blow you away either way.
I served the soba noodles with marinated striped bass head but it could be paired with a variety of foods if you’re not into head. Though I am, I won’t finish that sentence.
You could use it to accompany sushi, cooked fish, grilled chicken and a variety of other Asian influenced fair. I am guilty of not caring about food pairings and would eat this with pizza but I’m weird. You should probably just stick with Asian food. Though you could sneak it into a bbq instead of pasta salad (yawn).
Best of all this will last in the fridge for 5-7 days! Whatever you serve it with I hope you enjoy this recipe of Sesame Soba Noodles and share it with your friends and family.
Ingredients
- 3 Bundles of Soba Noodles
- 2 tbs Sesame Paste - Asian or Tahini
- 2 tbs Rice Vinegar
- 2 tbs Chopped Green Onions
- 1/4 Cup Water
- 1 tbs Sesame Oil Plus Another tbs of Sesame Oil
- 1 tbs Sesame Seeds
- 1 tbs Low Sodium Soy Sauce
- 1 tbs Hoisin Sauce
- 1 tsp Sambal Chile Sauce
- 2 tsp Honey - More or less depending on amount of sambal sauce
- 1/2 tsp Salt
- 1/4 tsp Pepper
Instructions
- Cook noodles according to package
- Drain soba and run under cold water until they are cool to the touch
- Drizzle one tbs of sesame oil and toss the noodles to prevent sticking
- Combine all ingredients together to make sauce and whisk until smooth
- Dress noodles and keep refrigerated until time of serving
